I am trying to figure out how to write shrimp in Chinese.  If I was counting shrimp,  1 shrimp, 2 shrimp or 3 shrimp, would it be Ha for 1 shrimp, Ha Ha for 2 shrimp, & Ha Ha Ha for 3 shrimp?

Shrimp is written as 虾 in simplified Chinese or 蝦 in traditional. In Putonghua, it is pronounced as [xiā], while [Ha] is the Cantonese pronunciation.

The measure word for 虾 is 只 [zhī]. So, 1 shrimp is 一只虾, 2 shrimp is 两只虾 and 3 shrimp is 三只虾.

虾  xiā  prawn.
虾仁  xiārén  shrimp.
To count prawns or shrimps, you have to use a measure word (量词 — liàngcí) zhī
e.g.  一虾,两虾,三虾.......。
