In a listing, you use "、" instead of ",", I know that much. But for the last word in the listing, do you better use 和 or another listing-comma? Thanks in advance!

You should use 和 - it is the same principle as in English - "I speak German, French AND English" so in Chinese you should say  我会说德语、汉语和英语。
